I don’t discriminate when it comes to pizza. Part of the reason pizza is so fun (and delicious) is because you can personalize it to fit your mood! If you think about it, pizza could really be its own food group. We need to lobby for an amendment to the official food pyramid!

If you’re in the low-carb/keto/gluten-free world then you know that meat-crust pizzas are all the rage. There’s a really popular brand (who shall remain nameless) of chicken-crust pizzas that can be found at grocery stores but they’re REALLY expensive and in my humble opinion, not worth the price.

The chicken is just…meh.

But I must admit, the thought of a keto pizza crust made out of meat is fantastic. Definitely a stroke of genius from whoever invented that. (I’m pretty sure it wasn’t that particular brand.)

My friend Allie (she blogs over at ABK Living) lives in Chicago and is always raving about this sausage crust pizza she orders from a famous Chicago pizzeria. I don’t live in Chicago and haven’t found any restaurants here in Kentucky that offer something similar but the pictures she shares of this pizza are to. die. for.

I had to have some. So, I was searching Pinterest one day and couldn’t find a SINGLE recipe in the blogosphere for a sausage crust pizza. Not one.

Zero. Zip. Zilch.

I was shocked but also, that little lightbulb went off in my head. If I can’tfind what I’m looking for then I’ll CREATE it!

Sometimes it’s not about fancy dishes but damn good easy ideas!

Ingredients

  • 1 lb sweet Italian sausage
  • 1/4 cup marinara sauce (I use Rao’s)
  • 1/4 cup shredded mozzarella cheese
  • 15g pepperoni
  • 6 black olives, sliced
  • 1/4 cup diced green bell pepper
  • 4 slices provolone cheese

Instructions

  1. Preheat oven to 450 degrees.
  2. Press the sausage into a round 9″ cake pan. Make sure the top is level so that the crust will cook evenly.
  3. Bake the crust for 15 minutes.
  4. Remove from oven and use a paper towel to dab off excess grease. Transfer the crust to a baking sheet if desired.
  5. Spread the marinara sauce on top.
  6. Sprinkle the shredded cheese on top. Layer the vegetables and pepperoni. Top with the provolone slices.
  7. Place under the broiler for 5 minutes or until the cheese is melted and bubbly.

Recipe Notes

  1. This pizza is personal size and makes enough for 4 people to have 1 slice. One piece is extremely filling but if your macros all for 2, then go for it! Double or triple the recipe (in separate pans) to serve more people.
  2. Make sure to calculate the macros for the pizza you create. Macros will vary with sausage brand, toppings, etc. My nutrition label should be a guide.
  3. Make the crust in a cake pan so it will hold its shape. The sausage will shrink down some in cooking, which is normal, but it will stay circular.
  4. Dab the grease off of the top of the sausage before adding the sauce or it will slide right off.

FAQs

What is Fathead pizza dough?

Fathead pizza dough is a low-carb, gluten-free pizza dough. It’s made from almond flour and mozzarella cheese and is a favorite of those on a keto diet because it’s easy to work with and holds up well. The term comes from the movie “Fat Head”, in which the main character loses weight on a low-carb diet.

Does it matter which kind of sausage I use for the crust?

Not really. Just be aware that the type of sausage will affect the taste and texture of your pizza. Because there is so much sausage in a sausage-crust pizza, be sure to choose a sausage with a strong flavor (but not so strong you’ll be sick of the taste after two bites). Some popular choices are Italian sausage, chorizo, or breakfast sausage. You can also mix and match different types of sausage to create your own unique flavor combinations.

What about a breakfast pizza?

Thanks to Kitty, who, in the Comments section, said she adapted the recipe to include sausage with a bit of shredded parmesan for the crust… Topped with scrambled eggs, bacon, home made keto country gravy, and shredded cheese. Give it a try!

How To Store Sausage Crust Pizza

Make sure your pizza is properly wrapped or covered to prevent it from drying out or becoming contaminated. You can wrap the pizza in plastic wrap or aluminum foil, or place it in an airtight container.

To reheat sausage crust pizza, you can place it in the oven at 350°F (180°C) until it is heated through and the cheese is melted. Alternatively, you can microwave individual slices for a quick and easy reheating option. Just be sure to watch the pizza carefully as it reheats, as the sausage and cheese can easily become overcooked or burnt.
